The question might be, what “Oshibori Udon” is. “Oshibori Udon” is very native province way of eating udon noodle, soaking udon noodle into squeezed juice from hot radish, which is a specialty of Shinshu area.
The hot juice happens to make your tongue numb.lol
But you can enjoy variety of taste by putting miso in or adding soup stock into the juice.
It actually attracts me with its light taste and pleasant aftertaste.
It is the way of eating udon from the home of udon, Shinshu area and it is very fascinating.
How to eat Oshibori Udon lol
First of all, please try to have it with the hot radish juice without putting anything in it.
You can enjoy scent of white radish and its fresh hotness.
In second, please put some miso little by little into the juice.
It makes a simple, but little punchy taste with the smell and sweetness of miso.
There are also soup made by dried bonito shavings on the table. How cool is that! You can enjoy blending 3 kinds of seasonings and make it your favorite taste!

It was much more fulfilling than I thought, and feels I had a healthy food for lunch!
It also seems easy to show up with ease, and some ladies came by their self.
It gets busy on the weekend, but “Hanabou” has many aspects to be loved by local people. I cannot be any happier to have such a simple and honest taste of udon noodle detached fancy looking.
